One of my daughters is interning at Purdue for the summer and came home for the Holiday weekend. I asked what she would like to eat and she said a home cooked meal. We bought a fillet of Sockeye Salmon, eggplants, and cherry tomatoes. I put the cherry tomatoes in a skillet with olive oil, salt, and black pepper. This was put in the oven at 375 degrees Fahrenheit for 20 minutes. The eggplant was split lengthwise and coated with olive oil, salt, and black pepper. I placed it skin side down on an aluminum foil lined baking sheet and baked it for 40 minutes.
Once the tomatoes were done, I removed them from the oven and set them aside in a bowl. In the same skillet, I added three cloves of chopped garlic, a small diced onion, and a couple tablespoons of olive oil. I cooked them until they were soft and turned off the heat, I then added the tomatoes to the skillet to rest. Once the eggplants were cooked, I removed the skin and cut them into small pieces. I added them to the skillet with the tomatoes and cooked the mixture at a high heat with a tablespoon of olive oil. After 15 minutes, everything was soft and I added 4 tablespoons of Sherry vinegar.
At this point I put the salmon on the aluminum foil lined baking sheet and set the oven to a low broil. I put salt and black pepper on the fish and made sure to keep an eye on it so that it does not overcook.
Sounds like a very good and very healthy meal right? This meal was proving to be too healthy. I had a craving for sugar as the meal did not have any starches. I looked at my two daughters who are home right now and asked, “While I was cooking did you two by chance buy any ice cream?” To my relief they said, “Yes!”
I jumped up and ran to the freezer anticipating a nice container of all natural Breyer Ice cream. To my disappointment, what I found in the freezer was a pint of gelato. You have no idea how small a pint looks when there are six people at the dinner table. “That’s it? You bought a pint of ice cream for six people?” My daughters said, “Dad, it’s gelato not ice cream and we didn’t think you would want any being on a diet.”
I hate diets.
What I need is a sugar free dessert with all natural ingredients. With agave sweetener there is no glycemic spike. It is metabolized as a food not sugar, so this is something I will be using quite often.
